TGIF: Pineapple Mint Caipirinha

4- 1.5 inch chunks pineapple
2 mint leaves, torn
1 oz simple syrup
2 oz Rum

Muddle the pineapple, mint and syrup in a shaker. Fill the shaker with ice and add rum. Shake vigorously. Serve in a rocks glass. Garnish with pineapple wedge.
