Our Main Squeeze: Passion fruit & Ginger Cocktail


For the ginger passion fruit syrup:
   200g sugar
   500ml water
   1 x 5cm piece of ginger sliced
   pulp and seeds from 10 passion fruits
   juice and zest (2 lemons)

To serve:
  light rum
  soda water/sparkling water
  fresh mint
  lemon slices

*serves 4-6, prep time: 25 min.

What’s sweet ‘n sour and tasty all over? This passion fruit and ginger concoction might just shake up your world. With such a colorful personality, this cocktail is the perfect conversation piece at any gathering. To get started, boil the sugar and water in a small saucepan. Once the sugar has dissolved, mix in the ginger, passion fruit, lemon juice + zest. Set to cool. Next, pour a bit of the syrup into a glass and fill with rum, soda water, and ice. Garnish with a lemon wedge, mint leaf and serve. It’s a little bit quirky, somewhat addicting, and a whole lot of refreshing. Cheers!
